Halibut en Papillote

Ingredients (yields 2 servings)

  • 2 Sheets Parchment Paper
  • 5-6 oz 1-inch thick Halibut, Seabass or Black Cod
  • 2 tablespoons Canola Salad Oil
  • 4 cups Spinach
  • 2 tablespoons Butter
  • 3/4 cup White Mushrooms sliced
  • 1 cup Zucchini diced into 3/4-inch pieces
  • 2 Roma Tomatoes diced into 3/4-inch pieces

  • 1 Red Bell Pepper roasted, peeled, and sliced
  • 10 Kalamata Olives pitted and sliced
  • 6 Baby Artichokes fresh, cooked and quartered, or marinated and canned
  • 1 large Shallot minced
  • 1 tablespoon Garlic minced
  • 1/2 bunch Parsley chopped
  • 2 tablespoon White Wine
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 Lemon cut in 1/2
